Job Description
Position: Cellar Person
Grade: 5 (£6.14 ph)
Responsible to: Café/Bar Management
Purpose of job:
To operate as part of the Café/Bar on a daily basis and to support the management in the successful development of the Café/Bar. To take responsibility for the cellar, taking care to meet health and hygiene regulations, overseeing deliveries and ensuring appropriate stock levels are maintained. To ensure bar is appropriately stocked.
Principal Responsibilities:
- Serve a wide range of hot and cold beverages to a high standard, this includes the use of an espresso machine.
- Be aware of and undertake clearing and cleaning requirements in the Café/Bar areas and the Kitchen before, during and after opening hours.
- Operate computerised tills and PDQ machine accurately, take appropriate payments from customers, follow correct procedures for all transactions and give correct change for cash transactions.
- Ensure that the beer cellar is kept spotlessly clean and complies with all health and hygiene regulations.
- Place daily and weekly bar orders with relevant suppliers.
- Maintain stock levels in line with demand and ensure the cellar is prepared for stock take.
- Oversee deliveries into the cellar and ensure kegs, bottles and gas containers are stored correctly and efficiently with proper stock rotation.
- Ensure strict stock control and assist stock auditor when necessary.
- Assist with cleaning the beer lines as required and ensure that all staff are aware of the line cleaning requirements for the real ale.
- Prepare cask ales for service and train all staff in the procedures.
- Inform Café/Bar managers of stock rotation or ullage problems.
- Empty bottle skips daily into appropriate containers within the bin store.
- Stock up bar fridges with beer, wine and soft drinks and provide back up supplies in the beer cellar.
- Place spirits behind the bar correctly in the mornings.
- Work as part of the catering team and support the team to maintain the highest standards of service and cleanliness.
- Attend meetings as required to contribute ideas where possible.
- Maintain sound knowledge of all products available on the Café/Bar menu.
- Record movement and wastage of stock.
- Keep abreast of training opportunities to ensure skills are up to date and appropriate.
- Adopt safe working practices at all times, and conform to all relevant Health and Safety legislation.
- Carry out any other duties that can reasonably be expected of you in the effective running of the catering provision.

- Maintain correct stock levels.
- Accurately record movement and wastage of stock.
- Order patterns are accurate ensuring appropriate deliveries meet demand.
- Adhere to rota request format.
- Co-operate and communicate effectively with others in the department and building.
- Use itemised tills and handle cash correctly.
- Ensure presentation and availability of drinks.
- Ensure a safe and healthy work environment.
Person Specification:
Essential:- Previous experience in a similar role and environment.
- Proven experience in delivering excellent customer service.
- Ability to work as part of a team.
- General awareness of Health and Safety at Work Act 1974.
- General awareness of Food Safety legislation and best practices.
- Health and Safety training.
- Basic Food Hygiene Certificate.
- Knowledge of electronic point of sale systems (EPOS).
- Appreciation for working in an arts environment.
Terms and Conditions:
- Annual leave of 22 days per annum, rising to 27 days after two years continuous employment.
- A free meal will be provided for you whilst on duty.
- Thirteen week probationary period.
- Your working week will comprise of five eight-hour shifts which includes weekends and evenings.
- A taxi will be provided to take you home if your shift finishes after 11pm and you live within the city limits.
- A Stakeholder Pension Scheme is available to all Watershed staff, which is operated by the Bristol Chamber of Commerce who uses The Prudential.
- Watershed is open seven days a week, including bank holidays. As such, a flexible attitude is expected to ensure the Café/Bar remains operational at al times.
- Holiday dates need to be agreed with the Café/Bar Mnager at least three weeks in advance so that the Café/Bar is not left short staffed at busy times and overlaps do not occur.
